Under the Microscope: Q&A Session

For our third blog post, let’s get down to some of the hard-hitting questions about what makes Fermenteria unique and a scientific leader for consumer probiotic beverages.


Below, we have some of the most asked questions from our community of probiotic enthusiasts, and we’ve sat down with our scientists in the production team to get down the DNA for our responses.


Question 1
❖ How is the Brewing process natural? Is it traditionally fermented or are there modern
technologies and techniques used?


✔ Our Process relies on all the natural fermentation techniques that occur with all the
microorganisms present in the historical kefir, but in a much larger and controlled
environment. We use state-of-the-art laboratory equipment to make sure only the best
organisms are present for the fermentation, and then modern stainless-steel tanks with
temperature control to gently guide our fermentation to create the very best tasting
beverage possible. In this way, we combine the best of both historic and modern
approaches to create a beverage that is truly unique.

❖ What is the QC process along the way? How do we clean, test and make sure there is no bad contamination?

✔ Our quality control begins by hand selecting the best individual cells from our frozen
cryogenic storage. These cells are then nurtured and multiplied, turning a couple dozen
into several trillion cells with multiple checkpoints along the way to confirm our
supercells are growing healthily every step of the way, all before they added into the
final ingredients to make the drink you know and love.

✔ We clean everything, on every checkpoint to ensure no unexpected guests can join our
party. We do this with the unsung hero of the lab, our Autoclave, which can pressure
cook everything we use to 250F and 15 psi, higher than even the toughest microbes can
withstand.

✔ As for testing, we use a combination of specially designed agar plates and growth
medias to promote growth of only the organism we want, and we use another set of
agar plates combined with genetic identification to confirm our culture is exactly what
we want, in every single can that leaves our facility.

Question 3
❖ Why is sugar required to ferment and how does the Fermenteria fermentation get the beverage to zero sugar in the nutrition label?

✔ The basis of fermentation is consuming sugar, and our microbes love the sugar! Of
course we give them a balanced diet of nutrients and minerals to keep them in tip top
shape, but our blended culture is so vivacious it is able to use every bit of sugar we
provide and turns it into energy to create more cells, carbon dioxide, and delicious
flavors in the process. Because our cells are so powerful, our beverage finishes with no
sugar remaining, making it not only delicious, but a healthy alternative to soda as well.
